  1. Toss zucchini with olive oil and 2 tablespoons of pesto sauce in a bowl and season with salt and pepper
  2. Place zucchini on a small baking sheet with parchment paper
  3. Top each salmon fillet with the remaining pesto sauce
  4. Place salmon fillets on top of the zucchini
  5. Bake at 400f for 15-20 minutes or until salmon is cooked to your preference
