- 4 (6oz.) or (170 g) fresh or frozen salmon fillets
- 6 tablespoons jarred prepared pesto sauce (or make your own!)
- 2-3 zucchini (sliced with a spral cutter or julienne)
- 2 tablespoons olive oil
- salt and pepper to taste
- Toss zucchini with olive oil and 2 tablespoons of pesto sauce in a bowl and season with salt and pepper
- Place zucchini on a small baking sheet with parchment paper
- Top each salmon fillet with the remaining pesto sauce
- Place salmon fillets on top of the zucchini
- Bake at 400f for 15-20 minutes or until salmon is cooked to your preference
