Roasted Red Pepper Halibut

Grilled Halibut with Red Pepper Sauce

Serving Size: 4 Servings

Ingredients

Halibut

  • 2 lb Halibut Fillet
  • 2 tbsp Olive oil
  • 3 tbsp Lemon juice
  • 1 tsp Garlic, minced
  • 1/2 tsp Lemon peel, grated
  • 3 tsp Dried basil
  • Salt and pepper, to taste

Red Pepper Sauce

  • 1 (7.25 oz) jar Roasted red peppers, well-drained
  • 3 tbsp Sour cream
  • 2 tbsp Shallots, finely chopped
  • 1 tsp Olive oil
  • 1 tbsp Fresh cilantro, finely chopped
  • 1 tbsp Red hot sauce
  • Salt and pepper, to taste

Instructions

Prepare the Lemon-Basil Marinade:

  • In a small bowl, whisk together the lemon juice, olive oil, garlic, lemon peel, and dried basil.
  • Season with salt and pepper to taste.

Marinate and Grill the Halibut:

  • Preheat the barbecue grill.
  • Brush the halibut fillet with the lemon-basil mixture.
  • Grill the halibut for about 4 minutes per side, until cooked through.

Make the Red Pepper Sauce:

  • In a small skillet, heat the olive oil over medium heat.
  • Add the chopped shallots and sauté until translucent, then remove from heat and let cool.
  • Drain the roasted red peppers and place them in a food processor, processing until smooth.
  • In a large bowl, combine the pureed red peppers, sour cream, cooled shallots, cilantro, and hot sauce.
  • Season with salt and pepper to taste.

Serve:

  • Serve the grilled halibut with the prepared red pepper sauce on the side. Enjoy!
