Grilled Halibut with Red Pepper Sauce
Ingredients
Halibut
- 2 lb Halibut Fillet
- 2 tbsp Olive oil
- 3 tbsp Lemon juice
- 1 tsp Garlic, minced
- 1/2 tsp Lemon peel, grated
- 3 tsp Dried basil
- Salt and pepper, to taste
Red Pepper Sauce
- 1 (7.25 oz) jar Roasted red peppers, well-drained
- 3 tbsp Sour cream
- 2 tbsp Shallots, finely chopped
- 1 tsp Olive oil
- 1 tbsp Fresh cilantro, finely chopped
- 1 tbsp Red hot sauce
- Salt and pepper, to taste
Instructions
- Prepare the Lemon-Basil Marinade:
- In a small bowl, whisk together the lemon juice, olive oil, garlic, lemon peel, and dried basil.
- Season with salt and pepper to taste.
- Marinate and Grill the Halibut:
- Preheat the barbecue grill.
- Brush the halibut fillet with the lemon-basil mixture.
- Grill the halibut for about 4 minutes per side, until cooked through.
- Make the Red Pepper Sauce:
- In a small skillet, heat the olive oil over medium heat.
- Add the chopped shallots and sauté until translucent, then remove from heat and let cool.
- Drain the roasted red peppers and place them in a food processor, processing until smooth.
- In a large bowl, combine the pureed red peppers, sour cream, cooled shallots, cilantro, and hot sauce.
- Season with salt and pepper to taste.
- Serve:
- Serve the grilled halibut with the prepared red pepper sauce on the side. Enjoy!
