Garlic Avocado And Shrimp With Queso
Ingredients
3 ripe avocados, from Mexico
2 cloves garlic, mashed
2 teaspoons cumin
2 teaspoons paprika
1/2 teaspoon sea salt
1/4 teaspoon freshly ground pepper
1 pound medium shrimp, cooked
1/4 cup queso fresco, crumbled
Fresh parsley, chopped
1 lime, for garnish
Instructions
Slice open each avocado and remove the pit. Rub a tablespoon along the skin and the flesh and put in a large bowl. Take a fork and mash until smooth.
Add in garlic, cumin, paprika, salt, pepper and lime juice. Combine into the avocado.
On a large platter spread a layer of avocado to cover evenly. Top with shrimp then add queso fresco. Garnish with fresh parsley.
Slice the lime in 1/2 and squeeze one half over the shrimp then slice the other half and put on the plate when serving!
