Winter Comfort Clam & Kielbasa Chowder
Ingredients
- 6-8 oz turkey kielbasa, thinly sliced
- 1 pint clams, chopped
- 1-1/2 lb potatoes, diced
- 2 cups clam broth
- 3 cups water
- 1 pint heavy cream
- 2 tbsp extra virgin olive oil
- 1 shallot, diced
- 4 leeks, diced – white portion only
- 3 celery stalks, diced
- 1 tsp thyme, diced
- Pepper
- Salt, optional
- Cilantro, optional
- Ciabatta bread, optional
Instructions
- In a Dutch oven or stockpot, heat oil, shallots, leeks, celery and potatoes, stirring often over low heat until lightly brown (10-15 min). Add the kielbasa & cook for another 5 minutes.
- Add broth, water, and clams simmering for 15 minutes.
- Add cream and thyme & bring to a boil. Then reduce heat to simmer for 2 minutes.
- Add pepper, and salt if desired.
- Ready to serve with cilantro garnish, if desired. Enjoy!
Optional
Add corn, shredded carrots, or minced onions to pot to enhance flavor. This recipe also goes great with sliced ciabatta bread!
