Step 1: Season and Cook the Halibut
- Combine salt, black pepper, red pepper, paprika, and garlic powder in a small bowl.
- Rub evenly over both sides of the halibut.
- Heat olive oil in a nonstick skillet over medium-high heat.
- Cook halibut for 3–4 minutes per side, until fully cooked and flaky.
- Remove halibut and set aside. Reserve 1–2 teaspoons of pan drippings.
Step 2: Make the Creamy Cajun Sauce
- In the same skillet, add white wine and reserved pan drippings over medium heat.
- Scrape up any browned bits and heat thoroughly.
- In a small bowl, whisk together half and half, flour, Cajun seasoning, oregano, and smoked paprika until smooth.
- Pour the mixture into the skillet and cook over medium-low to medium heat, stirring constantly until thickened.
- Stir in lemon juice and heat through.
Step 3: Serve
- Spoon the warm sauce over the cooked halibut.
- Serve immediately with your favorite sides.
