
Pan Seared Arctic Char with Lemon-Dill Butter
Ingredients
- Arctic char fillets, skin-on
- Olive oil or clarified butter
- 2–3 cloves garlic, minced
- Juice of half a lemon
- 3 T fresh dill, chopped
- Salt and pepper
Instructions
- Pat fillets dry and season with salt and pepper.
- In a skillet, heat oil or butter and sauté garlic for 1-2 minutes. Stir in lemon juice and dill.
- Place fillets skin-side down in the hot skillet, pressing down initially to ensure even contact.
- Cook skin-side for 3-5 minutes until crispy and golden brown, then flip and cook for another minute.
- Serve with the pan sauce and a squeeze of lemon.
