
Swordfish Songana with Green Olive Relish
Ingredients
Swordfish
- 2 lb. fresh swordfish steaks
- 1/4 c. olive oil
- 1/4 c. fresh squeezed lemon juice
- 1 T fresh parsley, chopped
- 1 t. dry mustard
- 2 cloves fresh garlic, minced
- 1/2 t. dried basil,
- salt and pepper to taste
Relish
- 1/3 c. drained pimiento stuffed green olives
- 1-2 cloves fresh garlic
- 3 T fresh parsley
- 3 T olive oil
- 1 T fresh lemon juice
Instructions
Swordfish
Combine olive oil and lemon juice. Add all remaining ingredients and shake to mix. Pour over swordfish steaks and marinate for 5 minutes.
Prepare grill and grill for 4-5 minutes on each side over medium-high heat.
Serve with relish
Relish
In a food processor, pulse olives, garlic and parsley until chopped fine. Add remaining ingredients and pulse until desired consistency.
