Step by Step – How to BBQ a Lobster Tail

As you prepare to BBQ lobster tail, the initial procedure depends on whether you are cooking frozen or fresh lobster tail. 

First Steps for Frozen Lobster Tail

Frozen tails must be thawed first. One method is to place the frozen lobster tail in the refrigerator overnight. It will be ready to grill the next day. Alternatively, the same-day strategy is to place the frozen lobster into lukewarm water for approximately 15 to 20 minutes. Then rinse them and dry the tails off with paper towels. 

First Steps for Fresh Lobster Tail

If you are cooking fresh lobster, you will first separate the lobster tail from the body. With one hand, firmly hold the lobster’s body. With the other hand, hold the lobster tail. Now, twist the tail away from the body to remove it. 

Step 2

With sharp kitchen shears, cut the top of the lobster shell. Begin opposite the tail fins, and cut lengthwise, stopping when you get to the tail fins. Note: Leave the bottom part of the shell intact.

Step 3

Using a knife to cut along the center ridge, cut the flesh of the lobster tail lengthwise.

Step 4

Using your hands, pry the shell of the lobster tail open. Then pull the shell away from the meat just a bit.

Step 5

After saturating wooden skewers in water to prevent them from catching fire on the grill, run them through the center of the lobster tail meat. This helps prevent the sweet meat from curling up on the grill.

Grill the lobster tail flesh down first. Cook them without moving them until the flesh begins to brown a bit and the shells start turning bright red. This will take about 5 or 6 minutes.

Step 8 

Flip the lobster tails and brush the seasoning mixture over the meat. Close the grill and cook until opaque, which may take 1 to 6 minutes, depending on how many lobster tails are being grilled. If only grilling 4 ounces of lobster tail, the total time to cook is about 6 minutes, taking 1 minute maximum after flipping. The numbers for 10 ounces are 5 to 6 minutes flesh side down and 4 to 6 minutes after flipping.
