The Best Grilled Oyster Recipes

You can find the finest shellfish in the world in New England! Oysters and clams thrive in our cold waters. If you aren’t a fan of raw oysters, try grilled oysters!

It’s hard to find someone who can’t enjoy grilled oysters on the half shell seasoned to perfection. These buttery shellfish taste delicious, topped with garlic and a splash of lemon juice or grated Parmesan, paprika, and a dash of Tabasco.

Keep in mind that live oysters have a short shelf life. So when you pick up alive oysters from a fish market or seafood counter, cook them within 24 to 48 hours to ensure fresh

Be sure to take them out of the bag when you get home and transfer them to a bowl. Cover the bowl with a damp towel, not Saran wrap, and place it in the fridge until you are ready to shuck them. Following these steps will prevent the oysters from suffocating.

Clean the oysterunder cool, running water to remove any sand or grime before you shuck them.

Throw away any oysters that smell foul, have a broken shell, or won’t close when you tap on the shell.

Before you place the oysters on the grill, pick up a pair of long, sturdy BBQ gloves. If you can’t find any, plan to grill the oysters in a metal pan on top of a bed of rice or rock salt. This way, you won’t risk losing any of the oysters’ flavorful juices when you take them off the grill.

Hog Island Grilled Oysters 

Ingredients

  • 16 large fresh oysters on the half shell
  • 2 cloves garlic, finely minced
  • 3 Tbsp. extra virgin olive oil
  • 3 Tbsp. unsalted butter
  • 1 Tbsp. finely minced parsley
  • 1 tsp. lemon juice
  • 1/2 tsp. chili pepper flakes
  • 1/4 tsp. salt
  • Freshly ground black pepper, to taste

Directions

  1. Preheat the grill to 450° F or medium-high.
  2. While the grill heats up outside, place a small saucepan on your stove inside. Turn the heat up to medium-low to heat it up.
  3. Melt the butter in the pan. Then add the olive oil and garlic. Sauté until fragrant (about 30 seconds).
  4. Stir in the parsley, lemon juice, chili pepper flakes, salt, and pepper. Then remove from the heat.
  5. Drizzle the sauce over each oyster on the half shell.
  6. Place the oysters, cup side up, on the grill. Cover and cook for 4 to 5 minutes or until the edges of the oysters’ meat curls.
  7. Remove from the grill and serve!

Parmesan-Herb Grilled Oysters

Ingredients

  • 24 large fresh oysters on the half shell
  • 2 c. butter, softened
  • ½ c. finely grated Parmesan cheese
  • ¼ c. finely chopped parsley
  • 2 garlic cloves, minced
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. paprika
  • ½ tsp. ground red pepper
  • ½ tsp. hot sauce

Directions

  1. Preheat the grill to 450° F or medium-high.fresh New England oysters, new milford, ct
  2. Inside, place the butter, Parmesan cheese, parsley, and garlic in a food processor. Add the Worcestershire sauce, paprika, red pepper, and hot sauce. Then select pulse on the processor until combined well.
  3. Spoon 2 teaspoons of the butter mixture onto each oyster.
  4. Place the oysters on the grill with the cut side up. Cook uncovered for 7 minutes or until the butter is dripping off the sides and the edges of the oyster meat curls.
  5. Remove from the grill and serve!
