Cod A’la Scampi

Ingredients
2 lb. fresh cod fillet
1/3 cup butter
3 garlic cloves, minced
2 scallions, sliced
1 T fresh chopped parsley (or dill)
1 t. dried oregano
sea salt or kosher salt
fresh cracked black pepper
1/2 lemon, juiced
Instructions
Preheat oven to 350 degrees F.
In a medium skillet, melt butter over low heat. Add garlic, scallions, parsley and oregano. Saute 2 minutes.
Place fish in a baking dish or sheet pan. Season fish with salt and pepper. Pour butter mixture evenly over the top.
Baked fish in oven for 15-20 minutes, or until fish flakes easily with a fork. Squeeze with fresh lemon juice and serve.
