
Best Red Snapper Recipe
Ingredients
- 2 lb. fresh red snapper fillet
- 1 red bell pepper, diced small
- 1 small yellow onion, diced small
- 6 tablespoons butter
- kosher salt and fresh cracked black pepper
TOPPING:
- 1/4 cup all purpose panko
- 1/4 cup parmesan cheese, grated
- 2 tablespoons fresh parsley, chopped fine
Instructions
- Preheat oven to 350 degrees F.
- Spray bottom of baking dish (13 x 9 pyrex) with cooking spray.
- Sprinkle the chopped red pepper and onion in the bottom of your pan. Season fillets generously with salt and pepper than lay them on top of the vegetables.
- Slice the butter into slivers and cover fish with half. Add remainder to the bottom of the baking dish.
- Bake for about 20-25 minutes. Check for doneness with fork (flakey).
- Meanwhile, make topping. In a small bowl, combine all ingredients and mix well.
- When fish is done, turn on your broiler. Spread the topping over the fillets. IMPORTANT: Spoon the buttery liquid from bottom of your baking dish on top of the topping…making it moist. (Tilt pan if it’s easier).
- Place the fish under the broiler for 2-3 minutes, until the top is a beautiful golden brown. DO NOT BURN!
- To serve, place fish portion on a plate, then scatter the cooked vegetables on top.
