
Easy One-Pot Shrimp Scampi
Ingredients
- 1 pound large shrimp (raw), shelled and deveined (16-20 count)
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon extra virgin olive oil
- 2 tablespoons unsalted butter or ghee
- 1-2 cloves garlic, minced
- 1/4 cup dry white wine
- 1 lemon, zested and juiced
- 1/4 cup flat-leaf parsley, finely chopped
- 2 scallions, thinly sliced
- 1 lemon, sliced (for garnish)
Instructions
Cook the Shrimp:
Lay the shelled and deveined shrimp on a large work board or platter. Season with sea salt and freshly ground black pepper.
Heat a large pan over medium heat. Add the olive oil and butter to the pan.
Once the butter has melted and the oil is hot, increase the heat to medium-high. Add the seasoned shrimp to the pan.
Cook the shrimp for about 2 minutes, shaking the pan handle occasionally to move the shrimp around. Once cooked, remove the shrimp from the pan and set them aside on a plate.
Make the Sauce:
Lower the heat to medium and add the minced garlic to the pan. Cook for about 1 minute until fragrant.
Pour in the dry white wine, stirring and scraping up any bits from the bottom of the pan.
Add the lemon juice and lemon zest, and cook for another 2 minutes.
Finish the Dish:
Return the shrimp to the pan along with the chopped parsley and sliced scallions. Stir everything together until the shrimp are well coated in the sauce and heated through.
Serve:
You can serve the shrimp directly from the pan or transfer them to a serving platter.
Garnish with lemon slices.
