
Garlic Avocado And Shrimp With Queso
Ingredients
- 3 ripe avocados, from Mexico
- 2 cloves garlic, mashed
- 2 teaspoons cumin
- 2 teaspoons paprika
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground pepper
- 1 pound medium shrimp, cooked
- 1/4 cup queso fresco, crumbled
- Fresh parsley, chopped
- 1 lime, for garnish
Instructions
- Slice open each avocado and remove the pit. Rub a tablespoon along the skin and the flesh and put in a large bowl. Take a fork and mash until smooth.
- Add in garlic, cumin, paprika, salt, pepper and lime juice. Combine into the avocado.
- On a large platter spread a layer of avocado to cover evenly. Top with shrimp then add queso fresco. Garnish with fresh parsley.
- Slice the lime in 1/2 and squeeze one half over the shrimp then slice the other half and put on the plate when serving!
