Grouper with Hearty Tomato Basil Sauce
Ingredients
- 3 1/2 cups chopped seeded tomatoes (about 4 medium)
- 1/4 cup chopped green onions
- 1/4 cup dry white wine
- 1 tablespoon chopped fresh basil
- 1 teaspoon capers
- 1 teaspoon bottled minced garlic
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon crushed red pepper
- 1/4 teaspoon black pepper
- 2 teaspoons olive oil
- 4 (6-ounce) grouper fillets
Instructions
Preheat the Oven:
Preheat your oven to 425°F (220°C).
Prepare the Tomato Basil Sauce:
In a medium bowl, combine the chopped tomatoes, green onions, white wine, fresh basil, capers, minced garlic, lemon juice, salt, crushed red pepper, and black pepper. Stir well to mix all the ingredients.
Sear the Grouper:
Heat the olive oil in a large heavy skillet over high heat.
Place the grouper fillets in the pan, skin sides up, and cook for 2 minutes.
Bake the Grouper:
Turn the fillets over and top them with the prepared tomato mixture.
Bring the mixture to a boil, then transfer the skillet to the preheated oven.
Bake at 425°F for 8 minutes, or until the fish flakes easily when tested with a fork.
Serve:
Remove the grouper from the oven and serve immediately with the tomato basil sauce spooned over the top.
