Miso and Soy Glazed Sea Bass

Ingredients

  • ⅓ cup sake
  • ⅓ cup mirin
  • ⅓ cup miso paste
  • ¼ cup brown sugar, packed
  • 3 tablespoons soy sauce
  • 1 teaspoon yuzu juice
  • 4 sea bass fillets (4 oz each, about 1 inch thick)
  • 2 tablespoons green onion, chopped

Instructions

1. Prepare Marinade

  • Whisk together sake, mirin, miso paste, brown sugar, soy sauce, and yuzu juice in a bowl.

2. Marinate Fish

  • Place sea bass fillets in a large resealable plastic bag.
  • Pour marinade over fillets and refrigerate for 3–6 hours.

3. Broil Fish

  • Preheat oven broiler and set the rack about 6 inches from the heat source. Keep the oven door slightly ajar.
  • Arrange fillets on a baking sheet and discard marinade.
  • Broil until fish flakes easily with a fork, 7–9 minutes.

4. Garnish and Serve

  • Sprinkle with green onion before serving.
