Featured City Fish special: Fresh Steelhead Trout — $10.99/lb, valid through November 3, 2026.
Ingredients
- 1½ lbs fresh steelhead trout fillet, skin removed
- ½ cup panko breadcrumbs
- 1 egg
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 4 brioche burger buns
- 4 slices orange cheddar cheese
- Lettuce
- ¼ cup mayonnaise and 1 tablespoon lemon juice, for quick aioli
Instructions
- Prepare the fish. Finely chop the steelhead trout into small pieces. Combine with panko, egg, 2 tablespoons mayonnaise, Dijon mustard, garlic powder, smoked paprika, salt, and pepper.
- Form patties. Divide mixture into four patties. Refrigerate for 5–10 minutes if needed to help them hold together.
- Make the Halloween faces. Carefully cut triangle eyes, a nose, and a spooky smile into each cheddar cheese slice.
- Cook. Heat olive oil in a skillet over medium heat. Cook patties about 4–5 minutes per side, or until the center reaches 145°F.
- Assemble. Stir together ¼ cup mayonnaise and lemon juice. Spread onto toasted buns; add lettuce, cooked fish patty, and jack-o’-lantern cheddar slice.
- Serve. Tilt the top bun slightly to show the pumpkin face. Serve with sweet potato fries if desired.
