Baked Stuffed Cod

  • 2 pc. (approx. 1 pound each) fresh Cod fillets
  • 3-4 slices bacon, chopped
  • 1 small onion, chopped
  • 1/2 cup light cream or evaporated milk
  • 1 whole lemon, fresh squeezed
  • 1/2-1 whole dill pickle, chopped (per taste preference)
  • 1/2 teaspoon prepared mustard
  • 1 tablespoon fresh chopped parsley (cilantro ok to substitute)
  • 1 tablespoon cornstarch
  • 2 tablespoons butter, melted
  • 1/2 cup cheddar cheese, shredded
  • 2 tablespoons dry panko or bread crumbs

Preheat oven to 375 degrees Fahrenheit.  Arrange one fish fillet in greased 13 x 9 inch dish.  Season with salt and pepper.  Saute bacon in frying pan.  Remove.  Add onion to pan and cook till soft and golden.  Remove from heat and cool slightly.  Stir in light cream, lemon juice, pickle, mustard, parsley, cooked bacon and cornstarch.  Mix well and pour over fish.  Place second fish fillet over filling.  Brush top of fish with melted butter and sprinkle with cheese and bread crumbs.  Bake for 25-30 minutes or until fish is opaque and flakes easily with fork.
