Cod A’la Scampi
Ingredients
- 2 lb. fresh cod fillet
- 1/3 cup butter
- 3 garlic cloves, minced
- 2 scallions, sliced
- 1 tablespoon fresh chopped thyme
- 1 teaspoon dried oregano
- Sea salt or kosher salt, to taste
- Fresh cracked black pepper, to taste
- 1/2 lemon, juiced
Instructions
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Prepare the Garlic-Thyme Butter:
In a medium skillet, melt the butter over low heat.
Add the minced garlic, sliced scallions, fresh thyme, and dried oregano to the skillet. Sauté for about 2 minutes, until fragrant.
Season the Fish:
Place the cod fillets in a baking dish or on a sheet pan.
Season the fish with sea salt and freshly cracked black pepper.
Bake the Cod:
Pour the garlic-thyme butter mixture evenly over the top of the fish.
Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork.
Finish and Serve:
Squeeze fresh lemon juice over the baked cod just before serving.
