Saucy Cod Fillet
Served with buttered new potatoes and peas, these fillets make a delicious and easily perepared meal. The vermouth gives the codfish a piquant flavor.
2 lb. boneless cod fillet
1/4 c. melted butter or margarine
2 T fresh lemon juice
salt and fresh ground pepper to taste
1/4 c. dry vermouth
3 green onions, finely chopped
1 c. mayonnaise
1 1/2 t. chopped fresh dill or 1/2 t. dried dill, crushed
Arrange fillets in a buttered 9 x 13-inch dish which can be used under the broiler. Spread with butter and sprinkle with lemon juice, salt, and pepper. Broil 4 inches from source of heat for 5 minutes, turning once if fillets are thick. Mix remaining ingredients and spread over fish, Broil 2 – 3 minutes longer or until sauce is lightly browned.
