Bacon Wrapped Salmon
Ingredients
- 3/4 pound wild salmon
- 1 lemon, zested
- 3/4 teaspoon freshly ground pepper, divided
- Olive oil
- 8 slices of uncured bacon
Instructions
- Preheat your oven to 400 F.
- Cut up salmon into 12 or more small cubes.
- Drizzle lemon juice and a pinch of pepper on each piece of salmon then drizzle with olive oil.
- Slice each piece of bacon in half.
- Wrap each 1/2 slice with bacon leaving the seal at the bottom of the fish and on the baking sheet (seal side down).
- Bake for 10-12 minutes until salmon is medium and bacon is almost crispy. Enjoy with my spicy avocado guacamole!
