Bacon Wrapped Salmon
Ingredients
3/4 pound wild salmon
1 lemon, zested
3/4 teaspoon freshly ground pepper, divided
Olive oil
8 slices of uncured bacon
Instructions
Preheat your oven to 400 F.
Cut up salmon into 12 or more small cubes.
Drizzle lemon juice and a pinch of pepper on each piece of salmon then drizzle with olive oil.
Slice each piece of bacon in half.
Wrap each 1/2 slice with bacon leaving the seal at the bottom of the fish and on the baking sheet (seal side down).
Bake for 10-12 minutes until salmon is medium and bacon is almost crispy. Enjoy with my spicy avocado guacamole!
