Grilled Salmon Steaks on Citrus
Ingredients
- 1 grapefruit
- 1 orange
- 1 lime
- 1 lemon
- 5 to 7 large fresh basil branches, leaves attached
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 4 salmon steaks (about 8 ounces each)
Instructions
Prepare the Citrus and Basil:
Slice half of the grapefruit, orange, lime, and lemon into 1/4-inch slices and set aside.
Squeeze the juice from the remaining halves of the citrus fruits into a bowl.
Remove the basil leaves from the stems. Set the stems aside with the citrus slices and mince the basil leaves. Add the minced basil, salt, and pepper to the citrus juice and mix well.
Preheat the Grill:
Preheat the grill to medium-high heat.
Grill the Salmon:
Lay the citrus slices on the grill in a single layer, placing them as close together as possible.
Place the basil stems on top of the citrus slices.
Season the salmon steaks with salt and pepper, then lay them on top of the citrus slices and basil stems.
Cook the salmon for about 10 minutes on each side, basting often and generously with the basil citrus juice, or until the salmon is just cooked through.
Serve:
Discard the charred citrus slices and serve the grilled salmon immediately.
Note: This method works excellently for grilling any type of fish.
